Pork Carnitas is probably the most served meal in Mexico; it is found every where.
We take trimmed and cubed boneless pork butts and blend them with traditional ingredients
including achiote paste, garlic, chilis, orange juice, cinnamon, oregano and slow roast it all overnight
until it is fall apart tender served with a sauce made from the pan drippings and guacamole
